Crispy Fried Cheese Ravioli
How did we not know about fried ravioli before now! This is simply delicious and a real treat from us for you to indulge in this week.
- 2 eggs
- 1/2 cup buttermilk
- 2 cups panko breadcrumbs
- 500g packet best quality cheese ravioli
- Sunflower oil
- grated parmesan
- Red Pepper & Chilli Jam
- Lightly beat eggs and combine with buttermilk. Place egg wash and breadcrumbs in separate bowls. Dip each ravioli first in eggs wash, then in crumbs to coat.
- Half-fill a deep-fryer or saucepan with oil and heat until a cube of bread turns golden in 30 seconds. Working in batches of 5, fry ravioli for 1 -2 minutes until crumbs are golden and crispy. Remove with slotted spoon and drain on paper towel.
- Arrange ravioli on a platter, sprinkle with parsley and parmesan, then serve with Red Pepper & Chilli Jam (or similar) for dipping.
