
Ingredients
Base:
- 125g butter, melted
- 1/3 cup caster sugar
- 1 tsp vanilla extract
- 1 cup plain flour
- Pinch of salt
Topping:
- 125g butter
- 1/3 cup honey
- 1/2 cup brown sugar
- 1 cup flaked almonds
- Pinch sea salt
Method
- Preheat oven to 180°C and line a slice tin (approx. 20cm square).
- Make the base:
Mix melted butter, sugar and vanilla. Stir in flour and salt to form a soft dough.
Press evenly into tin and bake for 15 minutes until lightly golden. - Brown the butter topping:
In a saucepan, melt butter over medium heat until it turns golden and smells nutty.
Stir in honey and brown sugar, simmer, stirring constantly until the ingredients come together. - Add almonds:
Remove from heat, stir through flaked almonds and a pinch of salt. - Assemble:
Pour topping over the warm base and return to oven for 15–20 minutes until bubbling and golden. - Cool completely before slicing (this is key for clean bars).
