A delicious cafe-style toast you can re-create at home

Three Cheese & Tomato Chutney Sourdough Toastie
Serves 2
Ingredients
- 4 slices good sourdough bread
- 2 tbsp Long Track Pantry Tomato Chutney
- 40 g cheddar grated
- 40 g gruyère or tasty cheese, grated
- 40 g mozzarella, grated
- 2 tbsp butter softened
- 1 tsp wholegrain mustard (optional but lovely)
- Freshly cracked black pepper
Method
1. Mix the cheese. In a bowl combine the cheddar, gruyère and mozzarella. This combination gives the perfect balance of flavour, stretch and creaminess.
2. Prepare the bread. Spread the outside of each slice of sourdough lightly with butter.
3. Build the toastie. On the inside of two slices spread tomato chutney (and a little mustard if using). Top with the mixed cheeses and a pinch of black pepper. Spread the remaining slices with tomato chutney and place on top of the sandwich.
4. Toast slowly by heating a frying pan over medium-low heat and cook the toasties for about 3–4 minutes each side, pressing gently with a spatula, until golden and the cheese has melted. Alternatively, use your sandwich press
5. Rest briefly. Let the toastie sit for a minute before cutting – this helps the cheese set slightly.
To Serve
Cut diagonally and serve warm with a small rocket salad, or
an extra spoon of Long Track Pantry Tomato Chutney on the side.
