Sticky, sweet and just a little bit spicy! These chicken skewers get their gloss from our Red Pepper & Chilli Jam. They are perfect to serve for weeknight dinners, weekend BBQs or casually eaten straight off the skewer.

Sticky Chicken Skewers with Red Pepper & Chilli Jam
Sticky chicken skewers glazed with Long Track Pantry Red Pepper and Chill Jam. They are quick and easy to prepare, and delicious to eat. You can cook these delicious skewers on the bbq, under the grill or in the pan!
Ingredients:
- 500g Chicken thighs, cut into strips (usually around 5-6 per thigh)
- 3 x tbsp Long Track Red Pepper & Chilli jam (or similar)
- 4 x tbsp soy sauce
- 2 x tbsp sesame oil
- 1 x tbsp brown sugar
- Pinch salt
- To serve:
- Lime wedges
- Flat breads (store bought or homemade)
- Salad
Method:
- Mix the Red Pepper & Chill Jam, soy sauce, brown sugar, sesame oil and salt together in a mixing bowl.
- Toss the chicken strips through the marinade and rest for at least 1 hour, or up to overnight.
- Soak the skewer sticks in cold water for the same amount of time as the chicken is marinating.
- Share the chicken strips between 5-6 skewers and then cook in a hot pan, BBQ or under the grill until sticky and caramelised. You can baste the skewers with remaining marinade.
- Fry the flatbreads in a non stick frying pan with a tbsp of olive oil – they will only take about 30 secs on each side when the pan is hot.
