Ingredients
- 125g butter, softened
- 55g caster sugar
- zest of 1 orange
- 1 tsp vanilla
- 180g plain flour
- 300g of best quality chocolate (dark or milk, whichever you prefer).
Method
- Preheat oven to 190C (or 180C fan forced)
- Line a 20cm x 20cm tray with baking paper
- Mix the orange zest in with the caster sugar until well combined.
- Mix the butter and orange sugar mixture in a food processor until smooth. Add vanilla and process again.
- Stir in the flour until thoroughly combined. This can be done by hand or in the food processor (once the flour is combined, the mix should resemble breadcrumbs).
- Turn the mixture out onto a clean work surface and bring the dough together with your hands to form a smooth round. Then, press the round ball of dough out to fill the lined tray with your hands and smooth out the lumps and bumps.
- Score the dough into bars or squares and prick each piece with a fork.
- Place the tray in the oven for 15-20 minutes or until the shortbread is light golden in colour.
- Allow to cool in the tray for 15 minutes and then transfer to a wire rack.
- Gently heat the chocolate over a pan of simmering water and dip the shortbread as you like.
- Wait for the chocolate to cool. Serve with a hot cuppa and enjoy!
