This Chocolate Dipped Orange Shortbread recipe is foolproof, and the orange sugar adds a vibrant twist to classic shortbread. Ingredients

  • 125g butter, softened
  • 55g caster sugar
  • zest of 1 orange
  • 1 tsp vanilla
  • 180g plain flour
  • 300g of best quality chocolate (dark or milk, whichever you prefer).

Method

  1. Preheat oven to 190C (or 180C fan forced)
  2. Line a 20cm x 20cm tray with baking paper
  3. Mix the orange zest in with the caster sugar until well combined.
  4. Mix the butter and orange sugar mixture in a food processor until smooth. Add vanilla and process again.
  5. Stir in the flour until thoroughly combined. This can be done by hand or in the food processor (once the flour is combined, the mix should resemble breadcrumbs).
  6. Turn the mixture out onto a clean work surface and bring the dough together with your hands to form a smooth round. Then, press the round ball of dough out to fill the lined tray with your hands and smooth out the lumps and bumps.
  7. Score the dough into bars or squares and prick each piece with a fork.
  8. Place the tray in the oven for 15-20 minutes or until the shortbread is light golden in colour.
  9. Allow to cool in the tray for 15 minutes and then transfer to a wire rack.
  10. Gently heat the chocolate over a pan of simmering water and dip the shortbread as you like.
  11. Wait for the chocolate to cool. Serve with a hot cuppa and enjoy!
