Buttery Coconut Jam Slice Recipe:

This simple country slice works beautifully with apricot, plum, strawberry or mixed berry jam, all depending on what you have in the cupboard or select from the Long Track jam shelves. It’s the kind of slice that disappears fast, so you might want to make a double batch.

Ingredients – makes approx 16 slices

  • 1 cup plain flour
  • 1 cup rolled oats
  • 1 cup desiccated coconut
  • ½ cup brown sugar
  • 125g butter, melted
  • 2 tbsp golden syrup
  • 1 tsp baking powder
  • 1 cup Long Track Pantry Mixed Berry Jam (or your favourite flavour)

Method

  1. Preheat oven to 170°C. Grease and line a 20cm square slice tin.
  2. In a large bowl, combine flour, oats, coconut, sugar, and baking powder.
  3. Mix melted butter and golden syrup together, then pour into the dry ingredients. Stir until combined.
  4. Press two-thirds of the mixture into the base of the tin.
  5. Spread jam evenly over the base, leaving a small border at the edges.
  6. Crumble the remaining oat mixture over the top.
  7. Bake for 30–35 minutes until golden brown.
  8. Cool completely before slicing into squares or slices.
