Sweet blistered tomatoes, creamy whipped feta and a drizzle of poppyseed dressing come together in this fresh, vibrant dish. This is a lovely side dish to enjoy with crusty bread and antipasto for lunch, or as a delicious appetiser with drinks. The tomatoes roast until their skins split and their flavour deepens, while the feta is blended with cream cheese and yoghurt for a smooth, tangy base. A hint of lemon and good olive oil makes the dip light yet rich, the perfect backdrop for the warm, juicy tomatoes.

Our mouthwatering Blistered Tomatoes with Whipped Feta & Poppyseed Dressing is an easy plate to assemble, but it looks effortlessly elegant on the table. Spread the feta, swirl in the dressing, tumble over the blistered tomatoes and finish with a scattering of thyme. Serve with crusty bread for a relaxed lunch, or set it out with crackers and drinks for a starter that disappears fast.
Ingredients – makes approx 3-4 serves
Whipped Feta
- 200g Danish feta
- 100g cream cheese
- 135g Greek yoghurt
- 3 x tbsp olive oil
- 1 x tbsp lemon juice.
Blistered Tomatoes
- 1 x punnet cherry (or grape) tomatoes
- Olive oil
- Salt
- Pepper
Assembly
- Whipped Feta
- Tomatoes
- Poppyseed Dressing
- Thyme
Method
- Put all the whipped feta ingredients together in a food processor and whizz until smooth and creamy.
- Preheat oven to 180 °C.
- Line a small baking tray with baking paper and tip the cherry tomatoes in.
- Drizzle with olive oil and then season well with salt and pepper.
- Cook for approx 20 minutes or until tomatoes are blistered to your liking. Set aside for 15 minutes to cool.
- Remove the whipped feta from the food processor and place on a round dinner plate, spreading the dip evenly on the plate (leaving a couple of cm’s from the edge). This will form the ‘bed’ for the tomatoes.
- Place two tbsp of Poppyseed Dressing in the centre of the whipped feta and spread gently to cover a circle 10-12cm diameter.
- Place the tomatoes on top of the poppyseed circle and sprinkle with thyme.
- Serve as a side with crusty bread or with crackers as an appetiser.
