A simple 'make at home' version of our very popular Long Track Pantry Tomato Relish

This is a simple make at home version of our most popular relish – as given to ABC’s Simon Marnie on the Chef’s Challenge last month.  It will keep for one year and this recipe yields 2 x 250ml jars. You can easily double or triple this recipe – you will just need to adjust cooking times.

​INGREDIENTS

  • 1kg tomatoes – you can use any and all tomatoes here and happily mix varieties
  • 2 cloves garlic
  • 1 tsp whole cloves
  • 1 tsp peppercorns
  • 1 tsp allspice
  • 1 tsp ground ginger
  • 1 tsp salt
  • dash cayenne pepper or can add tbsp chilli flakes if you like it hot
  • 1/2 cup white wine vinegar

 

METHOD

Whizz tomatoes in the food processor. Place all the ingredients, except the sugar, in a heavy based pot and simmer gently for 30 minutes. Add 200g sugar and stir until dissolved.  Simmer again for 30 minutes or until thickened.  Pour into sterlised jars and seal.  Ready for eating!!
