Chicken, Lemon & Pea Pasta

This creamy one-pan chicken pasta is everything we love in a rustic dinner. It's simple, satisfying and full of fresh flavour. With lemon, dill, peas and parmesan stirred through tender pasta and juicy chicken, it’s a wholesome meal that comes together with minimal fuss. A true comfort dish for cosy nights or relaxed entertaining.

Heat the oil in a large heavy based saute pan over medium heat and then add the chicken to the pan. Sear for a few minutes on each side until light golden. Stir in the garlic and the chilli flakes and cook for another 30 secs.
Pour in the wine and stock and bring to the boil. Add the pasta, turn down to a simmer and cook for 12-15 minutes, stirring occasionally, until the chicken is cooked.
Remove the chicken from the pan, set aside, and then add the peas to the pan, turn up the heat and simmer until most of the liquid is absorbed.
While the liquid is absorbing, shred the chicken or cut into bite sized pieces.
Once the liquid is mostly absorbed, add the chicken back to the pan with parmesan, lemon zest and juice, cream and half the spinach. Stir, turn the heat off and cover/place a lid on the pot. Allow to sit for 5 minutes.
Remove the cover, add dill and the second handful of baby spinach. Stir and serve.
