The simple things....

Welcome to the Long Track Pantry blog! We are so excited to be 'blogging' and can't wait to share  with you, our recipes, foodie tips, new products and events from fabulous Jugiong.  Our philiosophy at the Long Track is to do simple things really well.  We take this very seriously and the humble ham, cheese & tomato toastie (a staple for travellers Australia wide) is the perfect example.  We load our toastie full of delicious ham, real cheddar and slow roasted tomatoes and then add lashings of butter to the outside of the toastie, creating a crunchy outer to compliment the soft tasty filling...........mmmmmmmm.  We apply this philosophy to all the products we make here at the Long Track Pantry - simple, delicious jams, chutneys, relishes and dressings and also to sourcing smart, simple giftware and homewares.  We are really looking forward to giving you our favourite recipes, best kept secrets & first previews of new stock but we are new to this and would love your feedback on what you would like to see on the Long Track Pantry blog.  Will leave you with our slow roasted tomato recipe - we roast nearly a box of these every night.  Look forward to seeing you in store.

Slow Roasted Tomatoes      

The best tomatoes to use for slow roasting are roma tomatoes - great colour and shape and respond well to the roasting.

Cut tomatoes in half lengthways and place side by side on an oven tray lined with baking paper.  Drizzle with olive oil, sprinkle with sea salt and castor sugar.  Place in the oven at 70 degrees and leave 6-8hrs or overnight, or until the tomatoes begin to dry out but are still soft.  This will depend a bit on the size and moisture content of the tomatoes.  These tomatoes will keep well in the fridge for several days stored in a single layer and are fantastic on sandwiches, antipasto plates and in pasta dishes.
